Day 44 - Lazy Sunday

Bend, Oregon, 08.13.2017

Today was an R&R day, with hanging out, doing laundry, etc. Preceded all that by going to St. Francis of Assisi Church in Bend. Beautiful new church (2009) and nice people.

After church, decided to try the #1 breakfast place in Bend: McKay’s Cottage. Without a doubt, the best breakfast we’ve had in our lives. Both were Eggs Benedict renditions, each well under 1,500 calories, we think:

Smith Rock Benny. Applewood bacon, fresh spinach, tomatoes, roasted red peppers, poached eggs & fresh hollandaise on grilled foccacia, served with cottage potatoes.

Crab and Sweet Potato Hash. Delicious snow crab, diced sweet potatoes, scallions and red peppers cooked golden brown, topped

with poached eggs & house made hollandaise. Served with a butter scone and fresh fruit.

Back at the campground, a guy stops over to chat. Turns out he and his wife graduated from Westminster College in Western PA 48 years ago. As we talked, it was hard not to try guessing his age, because 48 years ago is a long time and he didn’t look that old, but he was (old). Does that mean time is slipping by? Anyway, we talk about the upcoming eclipse and we mention we may not go up to Wyoming to view it because authorities estimated that 600,000 people will drive up from Colorado to Casper, a town one-tenth that size on a good day. Total gridlock. He then says not to look at the eclipse because eye docs are calling it a risky act in terms of eye health. So we just figure he’s an angel sent to confirm our change of plans not to go to Casper for the eclipse. Instead we’ll swing south through Utah and western Colorado as we make our route to the last US National Park on the list: Rocky Mountain NP.
